  • 1 cup bell peppers, diced (mixed colors)
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 4 large eggs
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Roll out the pizza dough on a floured surface.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add bell peppers and garlic; cook until tender.
  3. Stir in diced tomatoes, cumin, and cayenne pepper. Simmer for about 10 minutes until thickened. Season with salt and pepper.
  4. Spread the sauce evenly over the rolled-out dough. Make small wells for the eggs.
  5. Crack eggs into the wells, sprinkle with feta cheese, and bake for about 15 minutes until whites are set but yolks remain runny.
