  • 8 oz spaghetti or fettuccine
  • 1 cup homemade or store-bought pesto
  • 1/4 cup pine nuts, toasted
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil (plus more for drizzling)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cherry tomatoes in olive oil, salt, and pepper; roast for 15-20 minutes until blistered.
  3. Boil salted water in a large pot; cook pasta according to package instructions, reserving some pasta water.
  4. In a skillet over medium-high heat, sear seasoned scallops in olive oil for 2-3 minutes per side until golden brown.
  5. Drain pasta (do not rinse) and return it to the pot. Add pesto and reserved pasta water; mix until smooth.
  6. Toss in roasted tomatoes and scallops; serve topped with toasted pine nuts and extra olive oil.
