  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 4 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water and butter over medium heat until melted. Stir in flour until it forms a ball. Remove from heat and let cool slightly before adding eggs one at a time until smooth.
  3. Pipe long strips of choux pastry onto the prepared baking sheet and bake for 20-25 minutes until golden brown.
  4. In a bowl, mix pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, and whipped cream until smooth for the filling.
  5. For the caramel sauce, melt granulated sugar in a saucepan until amber; whisk in warmed heavy cream off heat and add sea salt to taste.
  6. Once cooled, cut eclairs open, fill with pumpkin mixture, and drizzle with salted caramel.
