  • 1 cup fresh strawberries (hulled and halved)
  • 1 cup whole milk ricotta cheese
  • 2 slices sourdough bread (thick-cut)
  • 2 tbsp raw honey
  • 1 tbsp balsamic vinegar
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the strawberries with honey and balsamic vinegar until coated. Spread evenly on the baking sheet.
  3. Roast strawberries for 15-20 minutes or until caramelized.
  4. While strawberries roast, toast the sourdough bread in the oven for about 10 minutes until golden brown.
  5. Once everything is ready, spread ricotta over each slice of bread, top with roasted strawberries, and drizzle with additional honey if desired.
  6. Garnish with fresh mint leaves and serve immediately.
