Ingredients

Scale
  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup raw walnuts
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed butternut squash with olive oil, brown sugar, cinnamon, salt, and pepper until evenly coated. Spread on the prepared baking sheet.
  3. Roast the squash for 25-30 minutes, stirring halfway through until tender and caramelized.
  4. While the squash roasts, prepare candied walnuts: in a small saucepan over medium heat, combine walnuts and maple syrup. Stir continuously for about 5-7 minutes until coated and fragrant.
  5. Once roasted, let the squash cool slightly before combining with the candied walnuts. Serve warm, drizzled with any leftover maple syrup.
