  • 2 cups fresh pasta dough
  • 1 cup roasted beets (about 2 medium beets)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg yolk
  • 4 tbsp unsalted butter
  • 6 fresh sage leaves
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beets in foil and roast for about an hour until tender. Cool, peel, and chop.
  2. In a mixing bowl, combine roasted beets with ricotta, Parmesan, egg yolk, salt, and pepper until smooth.
  3. Roll out pasta dough to about 1/16 inch thickness and cut into heart shapes.
  4. Place a teaspoon of filling on one half of each heart, moisten edges with water, fold over, and seal.
  5. Boil ravioli in salted water until they float (about 2 minutes).
  6. For the sauce, melt butter in a skillet with sage leaves until fragrant; add lemon juice before serving.
  7. Serve ravioli drizzled with sage butter sauce.
