  • 1 cup strong brewed espresso or coffee (cooled)
  • 8 oz mascarpone cheese (room temperature)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 7 oz ladyfinger cookies (about 24 cookies)
  • 1 cup fresh raspberries
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew espresso or coffee and let it cool.
  2. In a bowl, mix mascarpone cheese with sugar until smooth. Whip heavy cream until soft peaks form, then fold into the mascarpone mixture.
  3. Quickly dip each ladyfinger into cooled coffee and layer half in a rectangular dish.
  4. Spread half of the mascarpone mixture over the ladyfingers; sprinkle half of the raspberries on top.
  5. Add another layer of dipped ladyfingers, followed by remaining mascarpone mixture and raspberries.
  6. Refrigerate for at least four hours; dust with cocoa powder before serving.
