  • 1 tsp yeast
  • 2 tbsp sugar
  • 1 cup warm water
  • 1 cup mixed nuts (walnuts, almonds, pistachios), finely chopped
  • 1 tsp cinnamon
  • Honey or syrup (for drizzling)

Instructions

  1. In a bowl, mix flour, yeast, sugar, and warm water until smooth. Let it rest for 30 minutes until bubbly.
  2. Combine chopped nuts and cinnamon in another bowl to prepare the filling.
  3. Heat a non-stick skillet over medium heat. Pour ¼ cup of batter for each pancake and cook until bubbles form (about 2 minutes).
  4. Remove from heat, place one tablespoon of nut filling on one half of each pancake, and fold like a taco.
  5. Return filled pancakes to the skillet on low heat for about one minute until warmed through and slightly crispy.
  6. Serve warm, drizzled with honey or syrup.
