  • 1 cup pumpkin puree
  • 12 ladyfingers
  • 1 cup heavy cream
  • 1 cup brewed espresso or strong coffee (cooled)
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

Instructions

  1. Prepare the coffee: Brew espresso or strong coffee, then let it cool.
  2. Whip the cream: In a mixing bowl, combine heavy cream and sugar; whip until soft peaks form. Gently fold in mascarpone and pumpkin puree until blended.
  3. Add spices: Mix in cinnamon and nutmeg until well combined.
  4. Soak ladyfingers: Quickly dip each ladyfinger in cooled coffee and layer them in your serving dish.
  5. Layer: Spread half of the pumpkin mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  6. Chill: Cover and refrigerate for at least four hours or overnight to allow flavors to meld.
