Instructions

  1. Preheat oven to 375°F (190°C). Grease six ramekins with butter and sprinkle sugar inside.
  2. In a mixing bowl, whisk together pumpkin puree, egg yolks, granulated sugar, cinnamon, nutmeg, vanilla extract, salt, and heavy cream until smooth.
  3. In a separate bowl, beat egg whites until stiff peaks form. Gently fold one-third of the egg whites into the pumpkin mixture to lighten it up before folding in the remaining egg whites.
  4. Divide the mixture evenly among prepared ramekins and place on a baking sheet. Bake for 25-30 minutes until puffed and golden brown.
