  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/2 cup chopped walnuts or pecans (toasted)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Dough: In a large bowl, mix flour, cold butter, and cream cheese until crumbly. Wrap in plastic wrap and chill for at least 1 hour.
  2. Make the Filling: Combine pumpkin puree, brown sugar, cinnamon, and nuts in a bowl. Mix well and set aside.
  3. Roll Out the Dough: Divide chilled dough into two parts. Roll each into an eighth-inch thick circle on a floured surface.
  4. Assemble Rugelach: Spread half the pumpkin filling on each circle. Cut into wedges and roll tightly from the wide end.
  5. Bake: Preheat oven to 350°F (175°C). Place rugelach on a parchment-lined baking sheet and brush with egg wash. Bake for 25-30 minutes until golden brown.
