  • 1/2 cup granulated sugar
  • 2 1/4 tsp instant yeast (1 packet)
  • 1 cup pumpkin puree
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup milk (whole or almond)
  • 2 large eggs (room temperature)
  • 1/4 cup melted butter
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, mix flour, sugar, yeast, salt, cinnamon, nutmeg, and ginger. In another bowl, whisk together pumpkin puree, milk, eggs, and melted butter until smooth. Gradually combine wet ingredients with dry until a soft dough forms.
  2. Turn onto a floured surface and knead for about 8 minutes until smooth. Alternatively, use a stand mixer with a dough hook.
  3. Place dough in a greased bowl and cover with plastic wrap or a towel. Let rise in a warm spot until doubled in size (about 1 hour).
  4. Punch down the risen dough and roll it out into a rectangle (1/2 inch thick). Cut into squares of about 2 inches.
  5. Layer squares in groups of four or five upright in a greased loaf pan. Cover and let rise again for another 30 minutes. Preheat oven to 350°F (175°C) and bake for about 30 minutes until golden brown.
  6. Allow to cool slightly before drizzling with vanilla glaze made by mixing powdered sugar, milk, and vanilla extract.
