  • 1/2 cup granulated sugar (100g)
  • 2 large eggs
  • 1 cup all-purpose flour (120g)
  • 1 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a madeleine pan.
  2. Melt the butter on low heat and let it cool slightly.
  3. In a bowl, whisk together sugar and eggs until pale and fluffy.
  4. Stir in melted butter and vanilla extract until combined.
  5. In another bowl, sift together flour, baking powder, and pumpkin pie spice; gently fold into the wet mixture until just combined.
  6. Chill batter for one hour in the refrigerator.
  7. Spoon batter into prepared molds and bake for 10-12 minutes until golden brown.
  8. Remove from the pan and let cool before serving.
