Pumpkin Spice Baklava is a delightful fusion of traditional Middle Eastern pastry and the warm flavors of fall. This decadent dessert features layers of flaky phyllo dough filled with spiced pumpkin puree and crunchy nuts, all drizzled with a sweet syrup.   • 1 package (16 oz) phyllo dough, thawed
  • 1 cup pumpkin puree (not pie filling)
  • 1 cup chopped walnuts and pecans (mixed)
  • 1 cup granulated sugar (divided)
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup unsalted butter, melted
  • 3/4 cup water
  • 1/2 cup honey

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a bowl, combine pumpkin puree, nuts, 3/4 cup sugar, cinnamon, and nutmeg. Mix well.
  3. Layer five sheets of phyllo in the prepared dish, brushing each with melted butter.
  4. Spread half the pumpkin filling over the phyllo. Add five more buttered layers.
  5. Add remaining filling and top with remaining buttered phyllo sheets (aim for ten layers).
  6. Cut into diamond shapes and bake for 45-50 minutes until golden brown.
  7. While baking, prepare syrup by simmering water and remaining sugar until dissolved; then stir in honey.
  8. Pour warm syrup over the hot baklava once out of the oven.
