Ingredients

Scale
  • 1 cup Arborio rice
  • 1 cup pumpkin puree
  • 3 cups low-sodium vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup seasoned breadcrumbs
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Cook the Risotto: In a large saucepan over medium heat, melt butter and sauté onion until soft. Add garlic and Arborio rice; toast for about 2 minutes. Gradually add vegetable broth while stirring until absorbed. Cook until rice is al dente and creamy (18-20 minutes).
  2. Combine Pumpkin: Remove from heat; stir in pumpkin puree and Parmesan cheese. Season with salt and pepper. Let cool slightly.
  3. Preheat Oven: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Shape Bites: Beat eggs in one bowl and place breadcrumbs in another. Scoop about two tablespoons of the risotto mixture, form into balls or patties, dip in egg, then roll in breadcrumbs.
  5. Bake: Arrange bites on the baking sheet and bake for 20-25 minutes or until golden brown.
  6. Serve Warm: Transfer to a platter and serve with dipping sauce like marinara or aioli.
