  • 2 large flour tortillas
  • 1 cup canned pumpkin puree
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp garlic powder
  • 2 tsp olive oil

Instructions

  1. Preheat a non-stick skillet over medium heat and add olive oil.
  2. In a bowl, mix pumpkin puree, shredded cheese, cinnamon, nutmeg, and garlic powder until well combined.
  3. Place one tortilla in the skillet and spread half of the pumpkin mixture on one side. Fold the tortilla over.
  4. Cook for 3-4 minutes until golden brown. Flip carefully and cook for another few minutes until both sides are crispy.
