  • 1 cup graham cracker crumbs
  • 1/2 cup chopped pecans
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 3/4 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, chopped pecans, and melted butter. Press into the bottom of a pie dish to form the crust. Bake for 10 minutes until golden.
  3. In another bowl, whisk together pumpkin puree, cream cheese, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
  4. Pour the filling over the baked crust and gently shake to settle. Bake for 40-45 minutes until set.
  5. Allow to cool completely at room temperature before refrigerating for at least two hours. Serve chilled or at room temperature with whipped cream.
