Instructions

  3. In another bowl, mix the eggs, vegetable oil, and milk until smooth. Combine with the dry ingredients and mix gently until just combined.
  4. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  5. Cool cupcakes for five minutes before transferring them to a wire rack.
  6. For the frosting, beat pumpkin puree, powdered sugar, cinnamon, and nutmeg until fluffy. Frost cooled cupcakes generously.
