  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 cup diced bell peppers (mix of colors)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder (adjust to taste)
  • 1 tsp ground cumin
  • 4 cups low-sodium vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic for about 5 minutes until fragrant.
  2. Add ground turkey or beef, breaking it apart with a wooden spoon, and cook until browned (6-7 minutes).
