  • 1/2 cup powdered sugar (for rolling)

  3. In another bowl, beat eggs and vegetable oil until smooth; stir in peppermint extract.
  4. Pour the wet mixture into the dry ingredients and mix until just combined; avoid overmixing.
  5. Cover the dough with plastic wrap and chill in the refrigerator for about one hour.
  6. Scoop tablespoons of dough, roll into balls, then coat in powdered sugar.
  7. Place them on prepared baking sheets about two inches apart and bake for 10-12 minutes until crinkly on top but soft inside.
