  • 1 cup light brown sugar
  • 1 cup pecans (chopped)
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan over medium heat, melt 1/4 cup butter with light brown sugar until bubbly. Pour into the pan and evenly sprinkle chopped pecans on top.
  3. In a mixing bowl, cream together the remaining butter and granulated sugar until fluffy. Beat in eggs one at a time followed by vanilla extract.
  4. In another bowl, whisk together flour and baking powder. Gradually add to the wet mixture until just combined.
  5. Spoon batter over the pecan layer and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
