  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 cup peanut butter (creamy or crunchy)
  • 1 large egg, room temperature
  • 2 cups favorite ice cream (vanilla, chocolate, or cookie dough)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, beat the unsalted butter, granulated sugar, brown sugar, and peanut butter until creamy. Add the egg and mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Scoop tablespoon-sized mounds onto prepared baking sheets about two inches apart. Bake for about 10 minutes until golden brown around the edges but soft in the center.
  6. Once cooled, place a scoop of ice cream between two cookies and gently press down to create your sandwich. Serve immediately or freeze for later.
