  • 1/2 cup ground flaxseeds (50g)
  • 1/2 cup pumpkin seeds, lightly toasted (75g)
  • 1/2 cup almond flour (50g)
  • 2 tbsp extra virgin olive oil (30ml)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 cup honey mustard dressing (120ml)

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Trim excess fat from chicken breasts and cut them into strips.
  3. In a bowl, mix ground flaxseeds, toasted pumpkin seeds, almond flour, paprika, garlic powder, salt, and olive oil until well combined.
  4. Coat each chicken strip thoroughly in the seed mixture.
  5. Arrange the coated strips in a single layer in the prepared baking dish. Bake for 20-25 minutes until golden brown and cooked through.
  6. Serve hot with honey mustard dressing for dipping.
