  • 1 lb lean ground beef (or turkey)
  • 2 tbsp taco seasoning
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 cup shredded cheddar cheese
  • 2 cups chicken broth

Instructions

  1. Prepare your ingredients by chopping bell peppers and onion, and mincing garlic.
  2. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary. Add chopped onion and bell peppers; sauté for about five minutes until tender.
  3. Stir in minced garlic and taco seasoning; cook for one minute until fragrant.
  4. Add diced tomatoes (with juices), chicken broth, and uncooked pasta into the pot. Mix well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 10 minutes or until pasta is al dente.
  6. Remove from heat; stir in shredded cheddar cheese until melted. Serve warm with optional toppings like sour cream or avocado.
