  • 1 cup diced boneless, skinless chicken breast
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1/2 cup green peas
  • 3 tablespoons ketchup
  • 4 large eggs
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon unsalted butter

Instructions

  1. Heat oil in a large pan over medium heat. Add diced chicken and cook until golden brown (5-7 minutes).
  2. Stir in onions and bell peppers; sauté until softened (3-4 minutes). Add peas.
  3. Mix in cooked rice along with ketchup and soy sauce; stir until heated through (about 2 minutes).
  4. In a bowl, whisk eggs with a pinch of salt. Melt butter in another pan over medium heat and pour in the egg mixture. Cook until edges set and middle remains slightly runny (about 3 minutes).
  5. Spoon the fried rice mixture onto one half of the omelet, then fold the other half over.
  6. Serve on plates with extra ketchup drizzled on top.
