  • 1 large egg
  • ⅓ cup vegetable oil (or melted butter)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth but not liquefied.
  3. Mix in the sugar, egg, and vegetable oil (or melted butter) until well combined.
  4. In another bowl, whisk together oats, flour, baking soda, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Pour the batter into the prepared loaf pan and smooth out the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool for ten minutes before transferring to a wire rack.
