  • 1 lb fresh mushrooms (cremini or button), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium heat. Add onions and cook until translucent (about 5 minutes). Stir in garlic and sauté for another minute.
  2. Add sliced mushrooms, stirring occasionally until browned and moisture is released (about 8 minutes).
  3. Pour in vegetable broth, add thyme, salt, and pepper to taste. Bring to a simmer.
  4. After simmering for about 15 minutes, use an immersion blender to purée the soup until smooth.
  5. Return soup to low heat; stir in heavy cream and warm through.
  6. Ladle into bowls and garnish with thyme or croutons.
