  • 1 cup all-purpose flour
  • 2 tsp active dry yeast
  • 1 ½ cups warm water (about 110°F)

  2. In another bowl, whisk together semolina, flour, and salt.
  3. Pour the yeast mixture into the dry ingredients and stir until smooth; the batter will be slightly runny.
  4. Cover the bowl with a kitchen towel and let it rest in a warm place for at least 1 hour.
  5. Heat a non-stick skillet over medium heat. Ladle about half a cup of batter into the skillet and cook until bubbles form on top (about 2 minutes). Do not flip!
  6. Serve warm drizzled with honey or syrup.
