  • 4 cups chicken or vegetable broth
  • 3 tbsp miso paste (white or red)
  • 200g ramen noodles (fresh or dried)
  • 2 green onions, thinly sliced
  • 2 soft-boiled eggs
  • 2 nori sheets
  • 100g sliced pork belly (or tofu)
  • 100g bok choy

Instructions

  1. Heat the broth in a large pot over medium heat until steaming.
  2. Scoop out a ladle of hot broth, whisk in miso paste until smooth, then return it to the pot.
  3. In another pot, boil water and cook ramen noodles according to package instructions; drain when al dente.
  4. Assemble bowls by placing noodles at the bottom and pouring rich broth over them.
  5. Top with sliced pork belly (or tofu), halved soft-boiled eggs, green onions, nori sheets, and sautéed bok choy.
  6. Serve immediately and enjoy!
