  • 1 package (9 oz) pie crusts
  • 1 cup fresh salmon fillet, cooked and chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup fresh spinach or kale, chopped
  • ½ cup grated cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick spray.
  2. Roll out the pie crusts and cut circles slightly larger than the muffin tin holes. Press them into the greased tin.
  3. In a skillet over medium heat, cook the salmon until flaky (about 5 minutes per side), then chop into pieces.
  4. In a bowl, whisk together eggs and heavy cream; season with salt and pepper.
  5. Stir in the chopped salmon, spinach (or kale), and cheddar cheese until well combined.
  6. Fill each pie crust with the mixture until about three-quarters full.
  7. Bake for 25-30 minutes or until golden brown and puffed up.
