  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 package (1 crust) store-bought pie crust

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out the pie crust on a floured surface and cut circles to fit muffin tin cups. Press each circle into the muffin cups.
  3. Heat olive oil in a skillet over medium heat and sauté the spinach for about 2 minutes until wilted. Remove from heat.
  4. In a bowl, whisk together eggs, heavy cream, salt, and pepper until well combined. Fold in sautéed spinach and both cheeses.
  5. Pour the egg mixture into each pie crust until just full.
  6. Bake for 20-25 minutes or until puffed and golden brown.
