  • 1/2 cup pure pumpkin puree
  • 1/2 tsp baking soda
  • 1 tsp cinnamon (plus extra for rolling)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (softened)
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. Add pure pumpkin puree and egg yolk; mix until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and a pinch of salt. Gradually add the dry mixture to the wet ingredients until just combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, then roll in a mixture of granulated sugar and cinnamon.
  6. Place cookie balls on prepared baking sheets about two inches apart and bake for about 10 minutes until lightly golden around the edges but still soft in the center.
  7. Allow to cool slightly before enjoying.
