  • 1 tsp baking powder

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini cake pan or muffin tin.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time followed by milk.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Gently fold in blueberries.
  5. Pour batter into prepared pan(s) and bake for 20-25 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, beat cream cheese with powdered sugar and vanilla until smooth. Frost cooled cakes generously.
