  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tsp high-quality matcha powder
  • 1/2 cup heavy cream
  • Fresh strawberries for topping

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter; press into the bottom of a springform pan.
  2. Beat softened cream cheese in a bowl until smooth. Gradually add sugar while mixing until well combined.
  3. Sift matcha powder into the cream cheese mixture and mix until fully incorporated.
  4. Gently fold in whipped heavy cream until smooth.
  5. Pour the filling over the prepared crust and bake for 45-50 minutes until set but slightly jiggly in the center.
  6. Allow to cool in the oven with the door ajar for one hour before refrigerating for at least four hours.
  7. Top with sliced strawberries before serving.
