  • 1 cup almond flour
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated erythritol
  • 16 oz full-fat cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix almond flour, melted butter, and erythritol until crumbly. Press into the bottom of a greased springform pan.
  2. In another bowl, beat cream cheese and sour cream until smooth. Gradually add erythritol and vanilla extract; mix well.
  3. In a saucepan over low heat, warm raspberries until soft; blend into a smooth puree, adding erythritol for sweetness if desired.
  4. Pour half the cheesecake filling over the crust; drizzle half the raspberry puree on top and swirl gently with a knife. Repeat with remaining filling and puree.
  5. Bake for 45-50 minutes or until the center is slightly jiggly. Turn off the oven and cool inside with the door ajar for one hour.
  6. Refrigerate for at least four hours before serving.
