  • 1 cup green lentils (rinsed)
  • 1 cup chickpea flour (sifted)
  • 4 garlic cloves (minced)
  • 1 medium onion (finely chopped)
  • 1 cup fresh parsley (chopped)
  • 2 tsp cumin
  • ½ tsp salt
  • Freshly ground black pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the lentils: In a pot, combine rinsed lentils with 3 cups of water. Bring to a boil, then simmer uncovered for 20-25 minutes until tender.
  2. Prep ingredients: While lentils cook, finely chop the onion and garlic. Chop the parsley as well.
  3. Mix ingredients: In a large bowl, combine cooked lentils (drained), onion, garlic, parsley, cumin, salt, and pepper. Mix well.
  4. Add flour: Stir in chickpea flour until everything is evenly incorporated.
  5. Form patties: Shape the mixture into six patties about one inch thick.
  6. Cook: Heat oil in a skillet over medium heat and cook each patty for about five minutes per side until golden brown.
