  • 1 cup almond flour
  • 1 cup icing sugar
  • 3 large egg whites (room temperature)
  • 1/2 cup granulated sugar
  • 2 large fresh lemons (juice and zest)
  • 4 tbsp unsalted butter
  • 2 tbsp cornstarch
  • 2 additional egg whites (for meringue)
  • 1 cup powdered sugar (for meringue)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift almond flour and icing sugar together in a bowl.
  3. In another bowl, whip egg whites until frothy; gradually add granulated sugar until stiff peaks form. Fold in the dry mixture gently.
  4. Pipe small circles onto prepared sheets, let rest for 30 minutes, then bake for 15-18 minutes.
  5. For lemon curd, whisk lemon juice, zest, cornstarch, sugar, and egg yolks in a saucepan over medium heat until thickened. Stir in butter until melted; cool completely.
  6. Whip additional egg whites with powdered sugar until glossy peaks form.
  7. Fill macaron shells with lemon curd and top with meringue. Toast lightly if desired.
