Korean Marinated Eggs, or Mayak Gyeran, are a scrumptious fusion of soft-boiled eggs soaked in a savory soy sauce marinade.   • 4 large free-range eggs
  • 1/4 cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 tbsp mirin or rice vinegar
  • 1 tsp chili flakes (optional)

Instructions

  1. Boil the eggs in a pot of water for 6-7 minutes for soft-boiled perfection.
  2. Transfer the eggs to an ice bath for at least 5 minutes to cool.
  3. In a bowl, whisk together soy sauce, sesame oil, mirin or rice vinegar, and optional chili flakes.
  4. Peel the cooled eggs and immerse them in the marinade. Let soak for at least 2 hours in the fridge, preferably overnight.
  5. When ready to serve, slice the marinated eggs in half and garnish with green onions or sesame seeds if desired.
