  • 2 ripe peaches, chopped
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 tsp baking powder
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp whole milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract.
  3. In another bowl, whisk together flour and baking powder. Gradually add this mixture to the creamed mixture until just combined. Gently fold in chopped peaches.
  4. Drop tablespoon-sized dollops of dough onto prepared baking sheets, spacing them apart.
  5. Bake for 12-15 minutes until golden around the edges. Allow to cool slightly on the sheets before transferring to wire racks.
  6. For the glaze, mix powdered sugar and milk until smooth; drizzle over cooled cookies.
