  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup fresh pineapple juice
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons fresh lime juice
  • Cooking oil for grilling

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, and lime juice until well combined.
  2. Place chicken thighs in a resealable bag or shallow dish and pour half of the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour or overnight for deeper flavor.
  3. Preheat your grill to medium-high heat (about 400°F).
  4. Remove chicken from marinade (discard any remaining marinade). Grill each side for about 6-7 minutes until fully cooked (internal temperature should reach at least 165°F).
  5. During the last few minutes of grilling, brush with reserved marinade to create a delicious glaze.
