  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup water
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1 cup fresh strawberries, diced
  • 1 cup heavy cream
  • 1/4 cup brown sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter, softened
  • 1 tbsp cocoa powder (optional)

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water and butter over medium heat until melted. Bring to a boil.
  2. Remove from heat and stir in flour until smooth. Let cool slightly.
  3. Mix in eggs one at a time until glossy and thick.
  4. Pipe mounds onto a lined baking sheet, spaced two inches apart.
  5. For the craquelin, mix brown sugar, flour, butter, and optional cocoa into a crumbly texture; roll out and cut into circles to place on pastry mounds.
  6. Bake for 25-30 minutes until golden brown. Cool before filling with whipped cream mixed with strawberries.
