  • 2 cups powdered sugar
  • 1 cup marshmallow fluff
  • 1 tsp vanilla extract

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  3. In another bowl, cream butter with brown and granulated sugars until fluffy. Add egg and vanilla; mix well.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Scoop rounded mounds of dough onto prepared sheets; bake for 10-12 minutes until golden but soft in the center.
  6. Allow cookies to cool completely on wire racks.
  7. For the filling, beat powdered sugar, marshmallow fluff, and vanilla until smooth.
  8. Spread filling between two cookies to assemble your cream pies.
