  • 1 3/4 cups icing sugar (200g)
  • 3 large egg whites (90g), at room temperature
  • 1/4 cup granulated sugar (50g)
  • Food coloring (optional)
  • For Vanilla Buttercream: 1/2 cup unsalted butter (113g), at room temperature
  • 2 cups powdered sugar (240g)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper, using a heart-shaped template if desired.
  2. In a bowl, sift together almond flour and icing sugar. In another bowl, whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form. Gently fold in the dry ingredients until the mixture flows like lava.
  3. Transfer the batter to a piping bag fitted with a round tip and pipe small hearts onto the baking sheets, tapping gently to eliminate air bubbles.
  4. Let them rest for 30 minutes before baking for 15-20 minutes until they have formed 'feet.'
  5. While cooling, prepare the buttercream by beating softened butter until creamy, then mixing in powdered sugar and vanilla extract until fluffy.
  6. Once cooled, spread or pipe the vanilla buttercream onto half of the macaron shells and sandwich with another shell.
