  • 4 cups low-sodium vegetable broth
  • 1 small shallot, finely chopped
  • ½ cup freshly grated Parmesan cheese

  • 2 tbsp extra virgin olive oil
  • Fresh herbs (like thyme or parsley) for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil, drizzle with olive oil, season with salt, and roast for about 1 hour until tender.
  2. In a large saucepan, heat olive oil over medium heat. Sauté shallots until soft and translucent, about 5 minutes.
  3. Stir in Arborio rice until coated in oil, about 2 minutes.
  4. Gradually add warm vegetable broth, one ladle at a time, stirring frequently until absorbed before adding more.
