Ingredients

Scale
  • 1 lb beef chuck roast
  • 2 medium onions
  • 1 cup sliced mushrooms
  • 1 large carrot
  • 1 cup demi-glace sauce
  • 2 tbsp low-sodium soy sauce
  • ½ cup red wine
  • Cooked white or brown rice (for serving)

Instructions

  1. Cut the beef chuck roast into bite-sized pieces and season with salt and pepper. Heat oil in a large skillet over medium-high heat, browning the beef on all sides.
  2. Remove the beef and sauté sliced onions, carrots, and mushrooms in the same skillet until onions are translucent.
  3. Pour in red wine, scraping up any browned bits from the pan; simmer for 2 minutes.
  4. Stir in demi-glace sauce and soy sauce; return the beef to the skillet and simmer on low for 20 minutes.
  5. Cook rice according to package instructions. Serve the beef mixture generously over rice.
  6. Garnish with fresh parsley if desired.
