Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • Green food coloring (gel)
  • Purple food coloring (gel)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and press firmly into the bottom of a springform pan to form the crust.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually mix in granulated sugar, then add sour cream, eggs (one at a time), and vanilla extract until fully combined.
  3. Divide the batter into two bowls; color one half with green food coloring and the other with purple.
  4. Pour alternating dollops of each colored batter into the crust, then swirl gently with a knife for a spooky effect.
  5. Bake for 50-60 minutes or until the center is slightly jiggly. Turn off the oven and let cool inside for an hour before refrigerating for at least four hours or overnight.
