Ingredients

  • 1 cup dried fava beans (or 1 can, drained)
  • 3 cloves garlic, minced
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. If using dried fava beans, rinse them and soak overnight. For canned beans, drain and rinse.
  2. In a pot over medium heat, combine soaked fava beans with fresh water. Bring to a boil, then reduce heat and simmer until tender (about 45 minutes).
  3. Once cooked, add minced garlic and lemon juice to the beans. Stir well and cook for an additional 5 minutes.
  4. Season with salt and pepper according to your taste.
  5. Drizzle olive oil over the mixture and stir gently before serving.
  6. Transfer to serving bowls and garnish with chopped parsley or extra garlic if desired. Enjoy warm with pita bread.
