  • 1 ripe dragon fruit (about 300g)
  • 8 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 pre-made graham cracker crust (9 inches)
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup heavy cream (for topping)
  • 1 cup mixed fresh berries (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). If using homemade crust, mix crushed graham crackers with melted butter until crumbly. Press into a tart pan and bake for 10 minutes until golden. Let cool.
  2. In a mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add lemon juice and pureed dragon fruit; mix until well combined.
  3. Pour the cheesecake filling into the cooled crust and smooth out the top. Refrigerate for at least four hours or overnight.
  4. Before serving, whip heavy cream until soft peaks form and spread over the tart. Top with mixed fresh berries.
