  • 4 bell peppers (any color)
  • 2 medium zucchinis
  • 1 cup long-grain rice
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 large sweet onion, diced
  • 1 lb ground beef or lamb (optional)
  • 2 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Water for baking

Instructions

  1. 1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and zucchinis, removing seeds gently.
  2. 2. In a pan over medium heat, sauté the diced onion in olive oil until translucent. If using ground meat, add it now until browned. Stir in the rice, tomato paste, parsley, dill, salt, and pepper.
  3. 3. Once cooled slightly, generously fill each vegetable with the mixture.
  4. 4. Place stuffed vegetables in a baking dish with a splash of water at the bottom. Cover with foil and bake for 30-35 minutes until tender.
