  • 1/2 cup extra virgin olive oil
  • 1/2 cup pimento-stuffed green olives, pitted and halved
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. Chop the cherry tomatoes, slice the red onion, and prepare the olives.
  3. In a large bowl, combine cooled pasta with chopped vegetables and toss gently.
  4. Drizzle with olive oil and lemon juice; sprinkle oregano, salt, and pepper. Toss until well coated.
